Two acetylated potato starch samples,with degree of substitution 0.047206 and 0.055913,were separated by sieving into three different size groups.The samples of a uniform granular size (between 30 and 50μm) were treated with 4 mol/L CaCI2 at room temperature.The morphological changes of the granules were observed with polarized light microscope.
