  The inactivation of natural microorganisms including the aerobic bacteria and the yeasts and moulds in mango pulp by high hydrostatic pressure (HHP) (300-600 MPa, 2.5-25 min) was studied.And rheological characteristics was investigated after HHP at 300 MPa for 15 min, 400 MPa for 5 min, 500 MPa for 2.5 min and 600 MPa for 1 min, respectively, at which cases the standard of commercial sterilization are available.All pulp samples studied were pseudoplastic liquid with the presence of a yield stress and exhibited thixotropic properties.
