磷脂分子结构复杂，不同种类的磷脂有着不同的端基、分子骨架和脂肪酸链。其中，脂肪酸链不饱和度的变化与细胞膜的特性与功能、磷脂-蛋白质相互作用以及脂质-脂质相互作用密切相关。目前，利用质谱同时实现磷脂双键异构体的结构鉴定和定量仍是分析化学中的难题。
