Fruit color both in flesh and skin is an important quality attribute for both appearance and antioxidant properties for fruit.Biosynthesis of plant pigments such as anthocyanins and carotenoids in fruit is controlled by genetics and environmental conditions.Some techniques such as gene transformation in the laboratory and the practice of fruit bagging have been used to change or improve fruit flesh and skin color.
