Sesame (Sesamum indicum L.) is an economic oilseed and is widely cultivated in tropical and subtropical areas of the world.The seeds contain 57-63% oil and 23-25% protein.Sesame meal is important by-products from oil extraction.This by-product is rich in proteins,carbohydrates and other nutrients,which could be recovered and used in food ingredients.Thus,the purpose of this study was to prepare the sesame flour and evaluate the characteristic of sesame flour.
