In this paper, ultra high pressure processing (UHPP) was applied to extract lentinan from Lentinus edodes stem (LES) at ambient temperature.The extraction parameters, such as pressure (100-400 MPa), liquid/solid ratio (10∶1 to 80∶1 mL/g), pressure-holding time (1-10 min) and pH value (pH4-8) were studied for the optimal lentinan extraction technology.The resulting was evaluated in terms of yield of extraction and component analysis with infrared spectra.As a result, the yield and component distribution of extracted lentinan were significant influenced with the pressure level and liquid/solid ratio.
