Pleurotus eryngii, also called king oyster mushroom, is a precious and popular commercial edible fungus developed recent years, pileus and stipe of whose fruit body are chewy and delicious in taste with the flavor of almond.However, productions ofP.eryngii are mainly fresh fruit bodies.Fresh fruit bodies of P.eryngii were putrescible for their high moisture content and they can be stored under controlled atmosphere for about 3 weeks.
