By integrating two mature optical sensing technologies of imaging and spectroscopy, hyperspectral imaging technology can not only provide spatial information, as color imaging systems, but also spectral information for each pixel in an image.With this unique feature, hyperspectral imaging has recently been widely studied and developedfor capturing both physical and morphological characteristics such as color, size, shape, and texture,and some intrinsic chemical and molecular information (such as water, fat, and protein) from food products,resulting in many successful applications in the food industry for quality and safety evaluation and control.
