Cyanidin-3-glucoside (Cy-3-glu) was a major anthocyanin present in red raspberry,blackberry and blood orange etc.,which was not stable similar to all anthocyanins and could be decolorized or degraded by many factors including Pulsed electric field (PEF) treatment.During treatment electrochemical reactions can occur in the treatment chamber.This may result in partial electrolysis of the solution and in corrosion of the electrode.In this article,Stainless steel,titanium alloy and pure titanium electrodes have been tested to investigate their applicability as electrode material by comparing their different degradation effect for Cy-3-glu,antioxidation activity (DPPH,FRAP,ORAC) change and metal release in the solution.
