Abstract:The fatty acid composition of the Sn-2 position in triglycerides of human milk fat substitutes needs to be analyzed and identified during the process of enzymatic synthesis.The reaction products are mixed with fatty acids,monoglycerides,diglycerides,and triglyceridese,usually many pieces of thin-layer chromatography (TLC)plates are needed to obtain pure triglycerides,and subsequently the triglycerides are incubated with pancreatic lipase in order to obtain the sn-2 monoglycerides.
