Dried cacao carp was ground and macerated with some organic solvents including methanol,ethylacetate,and hexane respectively for 24 hours to extract antioxidant components.The activity of antioxidant components was expected to the phenolic and flavonoid contents and was detected by evaluation of their reduction power and DPPH radical scavenging activity.Among the solvents used for extraction,methanol was indicated to be the most potential solvent to yield phenolic and flavonoid components with the highest value of antioxidant activity.
