  Many furan-containing compounds have been reported to be toxic and/or carcinogenic.Furanoids occur in a wide range of fruits, herbs, foods, and beverages.The demand to identify harmful furans potentially ingested has been increasing, due to the rapidly growing global interest in the use of natural products as medical remedies, dietary supplements, and natural foods.The objectives of the study were to develop an analytical platform to screen cis-enediones resulting from metabolic activation of potentially harmful furans and establish a method to investigate their potential for protein modification in vitro and in vivo.2,5-dimethylfuran (DMF), a model furanoid, was incubated with rat liver microsomes supplemented with glutathione (GSH) and 4-bromobenzylamine (BBA) as trapping agents, followed by LC-MS/MS analysis.
