  Soy protein has been widely used due to its rich nutritional value,but it has sensitization,which is harmful to allergic people.hydrolysis is a good method for protein modification.Alcalase is used to hydrolyze soy protein,indirect competitive ELISA is used to determine the antigenicity of β-conglycinin in hydrolysates,and Response Surface Methodology is applied to optimize the hydrolysis conditions.
