α-L-阿拉伯呋喃糖苷酶的基因挖掘、底物特异性研究与理性设计

  果胶和木聚糖是存在于自然界中非常丰富的可再生资源,但有时这些资源并没有得到很好地发掘和利用,反而造成了环境污染。有效地转化和利用这类丰富的可再生资源需要多种酶的共同参与,其中α-L-阿拉伯呋喃糖苷酶起着非常重要的作用,是本课题的研究重点。它减少阿拉伯糖侧枝产生的空间位阻,使得内切型酶更易结合和分解聚糖主链,从而大大增加水解效率。本研究主要包括以下四个部分。
