Aminopeptidases(EC 3.4.11)are a group of exopeptidases that catalyze the hydrolysis of a wide range of N-terminal amino acid residues from proteins and polypeptides.They belong to metallohydrolases, which have a co-catalytic activity center contain metal ions.Hydrolytic enzymes that contain dinuclear centers can use every first row divalent transition metal ion from manganese to zinc, except copper, and metal ions form the active center with several key amino acid residues and play a key role in the substrate binding process.Metallohydrolases always catalyze diverse reactions such as the degradation of DNA, RNA, phospholipids, and polypeptides.
