  Response surface methodology was used to determine optimum conditions for extraction of polysaccharide from lady godiva pumpkins.A central composite design including independent variables such as pressure, pressing holding time and ethanol concentration was used.Selected response (dependent variable) which evaluates the extraction process was polysaccharide yield and the second-order model obtained for polysaccharide yield revealed coefficient of determination of 98.58%.Polysaccharide yield was primarily affected by pressure holding time and ethanol concentration.
