Thyme is an aromatic herb that has many species and is used extensively to add a distinctive aroma and flavor to food.Its essential oil has many biological properties:antiseptic,carminative,antimicrobial and antioxidant,among others.The main active compound of thyme volatile oil is thymol.The objective of this study was to estimate the cost of manufacturing (COM) of two green processes (SFE:supercritical fluid extraction and SD:steam distillation) to obtain thyme extract.
