乳酸直接转化法加工高钙鸡骨泥的工艺研究

  目的:提高鸡骨泥中游离Ca2+含量与生理活性.方法:以新鲜鸡骨架为原料,经高温软化、粉碎、用胶体磨研磨制成超细鲜骨泥、添加含量为85%乳酸,研究确定乳酸直接转化法加工高钙鸡骨泥的工艺条件.结果:以不经稀释的骨泥原液直接进行转化,选择乳酸添加量为20g/L-40 g/L,转化温度30~45℃,在0.5-1.5 h内结束保温.以该工艺生产的鸡骨泥中乳酸钙含量达40.71 mg/g,Ca2+质量浓度这5.29 mg/g;能够显著提高鸡骨泥中的乳酸钙与Ca2+质量浓度,所得产品具有良好的风味与口感.
