Soymilk is one of the major soy-based products.Some ployphenolic compounds and antioxidant activities were unavoidably lost or changed during the soymilk-manufacturing process.In this study,the effects of the manufacturing process of three cultivars of black soybean(Glycine max)on the total polyphenolic content(TPC),the total flavonoid content(TFC),and the antioxidant activities including DPPH scavenging activity,FRAP,and ORAC of soymilk were investigated.
