  Volatile compounds in beer was analyzed using comprehensive two dimensional gas chromatography/timeof-flight mass spectrometer(GC × GC-TOF MS).In total, more than 300 compounds in beer were identified with good match and similarity and reverse number over 750 ~ 900.The main volatile compounds in beer were detected by this method, such as Hexanoic acid, ethyl ester /3-buten-1-one, 4-[2,6,6-trimethyl-1(or 2) cyclohexen-1-yl]-/cedrol/phenylethyl alcohol/benzyl benzoate/limonene/pinene/1,3,7-octatriene, 3,7-dimethyl-/ 2-buten-l-one, 1-(2,6,6-trimethyl-1, 3-cyclohexadien-1-yl)-,[E]-/octanoic acid, ethyl ester/decanoic acid, ethyl ester/tetradecanoic acid,ethyl ester/pentadecanoic acid, ethyl ester / acetic acid, 2-phenylethyl ester/benzoic acid, butyl ester / naphthalene, 1-methyl-/benzenepropanoic acid, ethyl ester / butylated hydroxytoluene / phenylethyl alcohol / 1,6,10-dodecatrien-3-ol, 3,7,11-trimethyl-,[E]-/tetradecanoic acid, ethyl ester/ 2(3H) furanone, dihydro-5-pentyl-/2-propenoic acid, 3-phenyl-, ethyl ester ,etc.(Fig.1)
