  Freshwater fish scale collagen was prepared from papain hydrolysis,and the edible collagen/chitosan blend films were prepared by solvent-casting method.The influence of papain enzyme dosage,substrate concentration,enzymolysis time,the enzyme solution temperature on the enzyme reaction were measured.And the results are as follows: enzyme dosage 4%,substrate concentration 1∶20,enzyrnolysis temperature 20 ℃,and enzymolysis time 36h.Under optimal conditions,the hydrolysis degree of collagen from freshwater fish scale was 17.48%.The conclusion was that papain has good hydrolysis effect on collagen extracting.And the influence of the glycerin content,the ratio of collagen and chitosan,and the concentration of collagen on blend film were researched.Results show that at the ratio of collagen and chitosan 1∶4,collagen concentration 2%,glycerin content 25%,the TS,EAB,and light transmittance of collage/chitosan film are obviously improved,which provides useful information for the potential application of freshwater fish scale collagen-chitosan blend films on the preservation of aquatic products.
