鸡蛋中的一些主要蛋白质都属于糖蛋白,它们既是营养成分和抗菌活性成分,同时也是公认的食品过敏原.这些糖蛋白上的糖链被认为是引起人体超敏反应的一类抗原决定簇,对这些糖链的结构进行分析,对于鸡蛋糖蛋白的生物活性研究和开发应用以及对鸡蛋过敏的诊断和防治都有重要指导意义.
