Fleshy fruit,including stone fruit (e.g.peaches) and grapes,are metabolically active after detachment and and postharvest conditions and manipulations deeply affect physiology,composition,and quality traits.In this context ethylene may play a crucial role,as demonstrated in mutants and gentoypes with altered ethylene physiology,and through the application of exogenous treatments with this hormone and/or the inhibition of its biosynthesis/perception.
