  Ginseng seed oil is known to have ideal oxidative stability and can be developed as new healthy edible oil [1].Ginseng berry consists of a seed and flesh surrounding the seed.As most of oils are rich in ginseng seed,the flesh part of ginseng berry is normally removed before oil extraction.However,its flesh part is rich in valuable bioactive compounds such as vitamin E and ginsenosides.Therefore,the oil extracted from ginseng berry might have more functional compounds than that extracted from sole ginseng seed.This study was performed to provide an efficient solvent that can be used for the oil extraction from Korean ginseng berry.Most oil composition of ginseng berry can be successfully extracted by n-hexane [2],but this solvent is not efficient for the extraction of the minor but very important components such as ginsenosides,which can be easily extracted with ethanol.The sole ethanol is not proper for the ginseng oil extraction.This indicates that the mixture of ethanol and n-hexane may be more useful for the extraction of oil components as well as ginsenosides from the ginseng berry than either of the two.The mixture of ethanol and n-hexane at various volume ratios was applied to the oil extraction from ginseng berry with a Soxhlet extractor.The amount of extracted oil was largest when the ethanol/n-hexane azeotropic solution was used as extraction solvent.In addition,the content of ginsenosides in extracted oil was highest in the case of azeotropic solution.This indicates that the ethanol/n-hexane azeotropic solution might be efficient solvent for the oil extraction from ginseng berry.
