The quality changes of Chinese mitten crab (Eriocheir sinensis) in same salty water content (9‰) were analyzed in this study.Biological indicators,nutrition composition,total amino acids,free amino acids and flavor nucleotides in abdomen meats and gonads of E.sinensis were determined,and the formation of crab quality was discussed during different fattening periods.The results show that indicators of gonads and content of crude protein significantly increased in initial,middle and late phases of fattening for both genders as compared with original phase.Compared with the original phase,the content of total amino acids declined in late and final phases for female crabs,but rose for male crabs.In fattening phases,the total content of free amino acids was higher significantly in most edible tissues than basic samples,and same variation tendency was found in Equivalent umami concentration (EUC).The content of three categories of flavor nucleotide (AMP,GMP,and IMP) increased at first,but decreased in the later phases.However,the content of IMP exhibited a significant increase of female crabs in late and final phases.In conclusion,the quality of crabs fattening from 45 to 60 days (later and final phases) was the best in all treated crabs with 9‰ content of salty water.
