In April 2002, detection of high concentrations of acrylamide in common heated starch-rich foodstuffs by the Swedish National Food Administration and researchers from Stockholm University attained considerable public concern, since acrylamide was found to be carcinogenic in rodents and has been classified as a probable human carcinogen[1].
