  The physicochemical properties of seed starch from Quercus glandulifera Bl.were evaluated.Starch swelling power, solubility (at 85℃), and syneresis were 21.28 g/g, 21.85%, and 17.5%, respectively.Starch paste (1%, w/w) clarity at 650 nm was 2.54%.Quercus starch consisted of 29.52% rapidly digested-starch, 12.39% slowly digested starch, and 55% resistant starch.Hydrolysis index and glycemic index of Quercus starch were 40.35% and 42.98%, respectively.The molecular weights of amylose and amylopectin were 5.15 × 106 and 6.71 × 107 g/mol, respectively.Quercus starch had higher peak viscosity and lower setback viscosity than other starch sources.Storage modulus, loss modulus, and loss factor increased with increasing temperatures.Quercus starch is suitable for special applications in the food industry.
