In Asian countries, several species of seaweed are used as human food, to provide nutrition and a characteristic taste.Fresh dried seaweed is extensively consumed, especially by people living in coastal areas.Hutai (Enteromorpha) is one of the dominant seaweeds in the littoral zone of Asia.In the past decades, a number of studies have been carried out on the chemical characterization of basic nutrients, valuable chemicals, polysaccharides, etc.present in Enteromorpha.So far, however, the amount and variety of the major pigments present in Enteromorpha still remain unknown.A range of different pigments are present in algae but two in particular should be highlighted; the chlorophylls and the carotenoids.
