Fagao, a steamed fermented cake of rice, is a kind of popular traditional fermented food in South China.It is prepared from a wet ground fermented batter of early indica rice by steaming in a mold.It is delicious for its soft and spongy texture, desirable sour taste and distinguishing characteristic of flavor.Thereinto, the flavor of fagao is one of the most important factors determining the consumer demand.The aim of this work was to qualitatively and quantitatively analyze volatile compositions of fagao and reliably identify the most impact odor-active compounds using powerful analytical methods.
