  The potential use of enzymes to process foods can be attributed to amazing specificity of enzymes towards carbohydrate,proteins and lipids.Consequently,enzymatic method is the environmentally friendly processes for selectively modifying a specific component within a complex food system.Although the enzymes occur naturally in raw food materials,the enzymes involving in food processing can be obtained from various sources such as microorganisms,plants,and animals.
