  目的 建立毛细管区带电泳-间接紫外法测定食品中高倍甜味剂三氯蔗糖的新方法 .三氯蔗糖又名三氯半乳蔗糖,其甜度是蔗糖甜度的600 倍以上,低热值,其热值几乎为零; 味质好,口感与蔗糖相似,无后苦味,储存期长等优点被认为是当前强力的甜味剂,无毒副作用、抗龉齿,不参与人体新陈代谢,不会引起肥胖及血糖波动.因此世界各地均已批准其在食品加工中使用,在GB2760-2011 《食品添加剂使用标准》中三氯蔗糖被我国批准在约30 种食品中添加,限量要求在0.25g/kg 至1.5g/kg 之间不等,典型的食品包括焙烤糕点、罐头、果酱、饮料、蜜饯凉果、调味料、配制酒等.为保障食品中三氯蔗糖未超范围和超限量使用,建立食品中三氯蔗糖的检测方法 十分必要.
