  To improve the stability and control catalytic rate of glucose oxidase (GOX) in flour,its immobilization was investigated.The enzyme was encapsulated in calcium alginate-chitosan microspheres (CACM) using an emulsification-calcium alginate internal gelation-GOX adsorption-chitosan coating method.The resultant CACM,investigated by scanning electron microscopy (SEM),was spherical with a mean diameter of about 26μm.The interaction between alginate and chitosan was confirmed by infrared spectroscopy (IR).The GOX load,encapsulation efficiency and activity of the CACM-GOX were influenced by the molecular weight and concentration of chitosan,encapsulation time and pH.
