Biofilms are highly dynamic and structured communities of microbial cells enmeshed in a threedimensional extracellular matrix (ECM).The exopolysaccharides (EPS) are key components in the ECM of oral biofilms clinically known as dental plaque.EPS provide binding sites on surfaces, mediate tight bacterial clustering-adherence to the tooth enamel, provide structural integrity, cohesion and affect diffusion properties of the biofilms matrix.Furthermore, EPS protect the bacteria from inimical influences of antimicrobials and other assaults.
