  Rheological properties of date pastes were investigated using cone and plate viscometery.The effect of temperature (20-70 ℃) on the rhcological parameters were determined using common models.The rheological behavior was well described by the three-parameter casson model at all temperatures.Viscosities in a range of shear rate from 14 to 500 S-1 were observed as a function of temperature.
