  PURPOSE: The utilization of beta-carotene, which is important for fortification of nutritional supplements, is limited by its poor water-solubility and chemical instability.The objective of this study is to develop a novel edible emulsion stabilized by dual-stabilizing agents for the encapsulation of beta-carotene, and to investigate the physicochemical properties and stability of beta-carotene emulsions.
