芋,俗称芋艿、芋头,古时称土芝、蹲鸱(chī)。芋的名称来历是很有意思的,据《说文解字》记载:“芋,大叶实根,骇人,故谓之芋也。口部曰:吁,惊也。”又据《毛传》载:“凡于声字,多训大。芋之为物,叶大根实,二者皆堪骇人,故谓之芋,其字从草,于声也。”这便是芋字的来由。芋是一种美味可口的蔬菜,耐贮藏,供应期又长,因此,以芋代粮可节约粮食,在备战备荒上显得较为重要。芋含有10—25%的淀粉和1—2.5%的蛋白质,所以它是有资格充作粮食的。它的茎叶还可以作饲料。苏东坡的《东坡
