目的了解南平市延平区所辖餐饮具部位餐具消毒状况,为提供餐饮具消毒管理提供依据。方法对2005-2010年南平市延平区所辖餐饮单位连续6年间餐饮具消毒检测数据进行统计分析。结果南平市延平区2005-2010年饮食业单位消毒总合格率为72.27%。合格率呈逐年上升趋势(P<0.01);宾馆酒楼食具合格率为82.09%,小餐馆合格率为72.96%,小吃店合格率为68.84%,食堂合格率为68.91%,快餐店合格率为62.11%,差异有统计学意义(P<0.01)。结论南平市延平区所辖饮食业单位食具的消毒质量合格率总体不高。卫生部门应采取综合措施加强对餐饮业单位的餐饮消毒监管。
Objective To understand the disinfection status of tableware under the jurisdiction of Yanping District in Nanping City to provide basis for disinfection management of tableware. Methods The data of disinfection test of tableware in catering establishments under the jurisdiction of Yanping District, Nanping City for 2005-2010 were statistically analyzed. Results Nanping Yanping District from 2005 to 2010, the total disinfection of catering units was 72.27%. The passing rate of restaurant showed a year-by-year upward trend (P <0.01). The passing rate of food and utensils in hotels and restaurants was 82.09%, that of small restaurants was 72.96%, that of snack bars was 68.84% and that of canteen was 68.91% 62.11%, the difference was statistically significant (P <0.01). Conclusion Nanping Yanping District food and beverage units under the jurisdiction of the quality of the disinfection pass rate is generally not high. Health departments should take comprehensive measures to strengthen the food and beverage industry unit catering supervision.
