蜂蜜始载于《神农本草经》,并列为上品,具有补中益气、润燥滑肠、止咳解毒的功效。蜂蜜即是常用中药及滋补食品,亦是蜜丸的主要赋形剂,有矫味,具防腐作用。由于蜜源植物众多,又因采收季节、产地、气候及潮湿度等的不同,蜂蜜的质量差异较大,加之常有掺伪现象出现,以致其质量—直难以控制。为此,本文就蜂蜜的商品质量监控方法及其真伪鉴别做如下报告,以供鉴别参考。1 蜂蜜的鉴别 1.1 性状鉴别:呈粘稠性透明或半透明液体,白色至淡黄色,或橘黄色至黄褐色,微有光泽,久置或遇冷则有白色颗粒状结晶析出。气芳香,味极甜。将光滑的铁丝烧红后插入蜂蜜中,即刻取出,铁丝应光滑、无粘糊状物及焦臭气。本品以含水分少、有油
