研究采用稀释醪液大罐全发酵法生产低度黄酒。结果表明,产品质量符合GB/T13662干型黄酒标准要求,其主发酵期缩短1～2 d,发酵度高,所产酒的非糖固形物、氨基酸态氮相对提高。
