将热水浸提与低压技术相结合,旨在低压环境中提取胡萝卜中的多糖成分。为探究低压水提胡萝卜多糖的最佳工艺。在单因素实验基础上,选定压力值、保压时间、液料比、保压温度4个因素的3水平进行中心组合实验,建立多糖得率的二次回归方程,通过响应面分析得到最佳低压提取工艺。研究结果表明,当压力值-50 k Pa,保压时间92 min,液料比29 m L/g,保压温度62℃时,多糖的实际得率为12.34%,且对自由基的清除率可高达89.33%。响应面法对胡萝卜多糖的低压提取工艺优化合理可行,此条件对胡萝卜多糖的活性成分也具有良好的保护作用。
