饮食不当与癌的发生关系密切过食肥甘、膏粱厚味,与乳腺癌、直肠癌、膀胱癌、前列腺癌密切相关。含有亚硝胺、黄曲霉素的食物有很强的致癌性,化肥污染的水果、谷物、蔬菜、水,以及霉烂、熏制的食物亦有致癌作用。其中,霉变的花生、玉米、谷类所含的黄曲霉素是引起肝癌的重要诱因;酸菜所含的亚硝胺最易导致消化系统癌症,尤其是食管癌。盐腌食品可加强亚硝胺类化合物的致癌性,与胃癌的发生有很大关系。
