薇菜(Osmunda japonica Thunb.)又名紫萁、高脚贯众、老虎牙、水骨菜等,是蕨类植物紫萁科的一种。寒冬过去,大地回春,薇菜就由头一年宿生的根状茎上萌发出嫩叶,嫩叶的顶端叶片曲卷,宛如拳缩的鸡爪,有的象韭菜的花苔,竞相生长。这时采摘嫩叶炒食,别具风味,味道鲜美。在历史上,我国劳动人民早就重视薇菜和利用薇菜了。公元前六世纪的《诗经》中就有“山有蕨薇,隰有杞桋”(《小雅·四月》)的诗句。薇菜是多年生草本植物,在我国主要分布在长江以南各省区。薇菜的叶长的可达一米多。在福建三明地区,从早春一直到5月中旬,
