目的了解宜兴市餐饮具消毒状况,研究卫生监督管理对策。方法采用现场抽样检测方法,对宜兴市辖区内的餐饮服务单位和餐饮具集中消毒单位餐饮具消毒状况进行现场调查。结果现场随机抽检各类消毒后的餐饮具3 810件,消毒质量平均总合格率为73.5%;餐饮具集中消毒单位消毒后餐饮具合格率为100%。学校食堂餐饮具消毒效果合格率为90.6%,营业性餐馆餐饮具消毒效果合格率为63.7%。用自动洗碗机消毒的餐饮具合格率最高,为87.5%;化学消毒剂浸泡消毒的餐饮具合格率最低,仅58.1%。结论宜兴市餐饮具集中消毒单位消毒效果能满足要求,营业性餐馆餐饮具消毒方法多样,消毒效果不稳定。
Objective To understand the disinfection status of tableware in Yixing and to study the countermeasures of health supervision and management. Methods On-the-spot sampling and testing methods were used to conduct on-site investigation on the disinfection status of catering service units and catering equipment with concentrated disinfection units in Yixing district. Results A total of 3 810 disinfected tableware were randomly spotted on the spot, with an average total pass rate of disinfectant of 73.5%. After passing the tableware disinfection, the pass rate of tableware was 100%. School canteens dining tableware disinfection results pass rate of 90.6%, commercial restaurant tableware disinfection pass rate of 63.7%. Disinfection with automatic dishwashing tableware with the highest rate of 87.5%; chemical disinfectant soaked disinfection tableware with the lowest pass rate, only 58.1%. Conclusion The disinfection effect of concentrated disinfection units of tableware in Yixing City can meet the requirements. There are various disinfection methods for catering tableware in commercial restaurants and the disinfection effect is not stable.
