以皱纹盘鲍内脏为研究对象,通过气相色谱-质谱等方法分析其脂质成分及其脂肪酸组成。分析结果表明皱纹盘鲍内脏含有丰富的脂质成分,以甘油三酯和磷脂为主,胆固醇含量较低;总脂脂肪酸以C20:4n-6和C20:5n-3等多不饱和脂肪酸为主,且富含缩醛甘油酯,表明皱纹盘鲍内脏在脂质方面具有较高的营养价值,且具有脂质功能因子的开发潜力。皱纹盘鲍内脏中性脂和极性脂以及磷脂酰胆碱(PC)和磷脂酰乙醇胺(PE)在脂肪酸组成上存在较大差异:中性脂易于结合饱和脂肪酸和单不饱和脂肪酸,而极性脂易于结合缩醛型甘油酯和多不饱和脂肪酸。作为极性脂主要成分的PC和PE,PC易于结合多不饱和脂肪酸,尤其是C20-PUFA和C22-PUFA;而PE近60%以缩醛磷脂酰乙醇胺形式存在。
Abalone of abalone was taken as the research object, and its lipid composition and its fatty acid composition were analyzed by gas chromatography-mass spectrometry. The results showed that the viscera of Abalone Haliotis discus hannai was rich in lipid components, mainly composed of triglycerides and phospholipids, while the content of cholesterol was low. The total fatty acids were mainly polyunsaturated fatty acids such as C20: 4n-6 and C20: 5n-3 , And is rich in acetal glycerides, indicating that Abalone Disc Abalone has a high nutritional value in lipids and has the potential for development of lipid functional factors. There are significant differences in the fatty acid composition between the neutral and lipid lipids of petri dishes and phosphatidylcholine (PC) and phosphatidylethanolamine (PE): the neutral lipids are easy to combine with saturated fatty acids and monounsaturated fatty acids, while the polar Lipids easily combine acetal type glycerides and polyunsaturated fatty acids. PC and PE, which are the main components of polar lipids, tend to bind to polyunsaturated fatty acids, especially C20-PUFA and C22-PUFA; whereas, nearly 60% of PE is in the form of plasmalogen ethanolamine.
