我国是个水果生产大国,1998年果品总量为5452.9万吨,1991~1998年果品产量平均年递增14.39%。目前我国鲜果贮存能力相当于总产量的20%左右,冷藏能力在7%左右,鲜果腐烂率达20~25%.特色水果由于形成产业化程度低,再加上加工、包装,运输等问题,出口量仅占1~2%。我国果品加工量仅占总产量的5~10%,90%以上鲜食,和世界先进国家30~40%加工量相比还有相当大的差距。而加工品的种类也较少,多为果汁、果脯、果酱等。在20世纪60~80年代,我国出现过一些果酒名牌产品如熊岳苹果酒,一面坡三梅酒、上海青梅酒、四川红桔酒,内蒙红豆酒,河北沙棘酒等。受当时消费习惯和消费水平的影响,这
China is a large country of fruit production. In 1998, its total output of fruits was 54.529 million tons. From 1991 to 1998, the average annual increase of fruit production was 14.39%. At present, the storage capacity of fresh fruits in our country is equivalent to about 20% of the total output, about 7% in refrigerating capacity, and 20-25% in fresh fruits.Due to the low degree of industrialization and the problems of processing, packaging and transportation, Exports accounted for only 1 to 2%.
