功能性低聚糖是一种以蔗糖、淀粉为原料,用酶法转化而成的纯天然新糖源。它由于其独特的生理功能现已成为一种重要的功能性食品基料,风靡日本、美国、西欧的食品市场。目前在日本,这种功能性低聚糖已取代或部分替代蔗糖而广泛应用在饮料、糖果、糕点、冰淇淋、乳制品及调味料等各种食品的生产中。它的生理功能为:
Functional oligosaccharides is a kind of pure natural sugar source which is made from sucrose and starch by enzymatic conversion. Because of its unique physiological function, it has become an important functional food base, sweeping the food markets in Japan, the United States and Western Europe. Currently in Japan, this functional oligosaccharide has replaced or partially replaced sucrose and is widely used in the production of various foods such as beverages, sweets, cakes, ice cream, dairy products and seasoning. Its physiological function is:
