目的调查无锡市不同餐饮单位的餐具消毒状况,为餐饮卫生监督管理提供依据。方法使用国标方法对无锡市餐饮单位餐具进行大肠菌群检测。结果 2013-2015年160家餐饮单位抽检的1 180件餐具,总合格件数831件,总合格率70.4%;大型餐饮店的合格率最高,为90%,中小型餐饮店的合格率最低,为61.7%;不同消毒方式中煮沸法消毒的合格率最高,为87.5%;不同存放方式的餐具消毒结果,保洁柜存放后的效果明显要好于摆放于餐桌上。结论 3年间无锡市餐饮单位餐具合格率虽逐年上升,但仍存在不少问题,应当采取相应的措施,并加强监督管理。
Objective To investigate the disinfection status of tableware in different catering units in Wuxi and provide the basis for supervision and management of catering health. Methods The national standard method was used to detect coliform bacteria in Wuxi catering units. Results From 2013 to 2015, 1 180 tableware samples from 160 catering establishments were selected, with a total of 831 qualified items, with a total pass rate of 70.4%. The highest pass rate of large-scale food and beverage outlets was 90% and the lowest qualified rate of medium and small-sized food and beverage outlets was 61.7%; different disinfection methods boiled disinfection pass rate was the highest, 87.5%; different storage methods of tableware disinfection results, cleaning cabinet storage effect was significantly better than placed on the table. Conclusion Although the passing rate of tableware in Wuxi catering units has risen year by year in the past three years, many problems still exist. Measures should be taken and supervision and management strengthened.
