皮蛋和咸蛋是我国传统的出口商品,也是较早的出口创汇商品。近几年来,由于我国畜牧业的发展,特别是养禽业的发展,使得蛋品产量大大增加。加之生活水平的提高,人们对蛋制品消费需求也大大增加,因而其产量也大大增加。随着国际贸易的发展,蛋制品出口数量也呈稳步上升的趋势。以福建为例,从原来的几乎空白,发展到现在的十家蛋品厂,年出口量也由1993年以前每年1000万枚,发展到1994年的2000万枚,1995年的出口量有望达到4000万枚,创汇可达500万美元。从历年出口的情况可以看出,出口的蛋制品
