战后,随着日本经济的发展、国民生活水平和生活方式的变化,外食产业以惊人的速度长足发展,目前已进入“三餐中至少有一餐是外食的时代。”外食产业的发展,对丰富日本人民的饮食生活、对日本经济特别是农业经济的发展,发挥着巨大的推动作用。一、日本外食产业的发展与特征“外食产业”一词是1973年秋日本食品工业对策恳谈会外食产业小组委员会在给农林大臣的咨询报告中首次正式使用的,以前一直叫饮食业。从饮食业到外食产业的称谓变化,意味着饮食业摆脱了“接待客人的营业”阶段转而向产业化发展,按企业要求充实经营内容。
