多环芳烃(Polycyclic Aromatic Hydrocarbons,PAHs)是指2个或2个以上苯环以稠环形式相连的一类化合物,具有基因毒性和致癌性。人类对PAHs暴露的主要途径是通过饮食,而植物油是饮食中多环芳烃的主要来源。本文对食用植物油中PAHs的来源和控制脱除方法进行了阐述。来源主要包括环境中多环芳烃的迁移;油料中灰尘、杂质的影响;加工时发生热解或热聚反应所致;加工时受机油、食品包装材料和溶剂等污染等。控制处理方法主要包括精炼、活性炭处理、萃取法、氧化技术等,并就食用植物油中PAHs生产控制提出了展望。
Polycyclic Aromatic Hydrocarbons (PAHs) refers to a class of compounds in which two or more benzene rings are fused together in a condensed ring, which is genotoxic and carcinogenic. Human exposure to PAHs is the main route through the diet, while vegetable oils are the main source of PAHs in the diet. In this paper, the origin and control of PAHs in edible vegetable oils are described. Sources mainly include the migration of PAHs in the environment, the effects of dust and impurities in the oil, the pyrolysis or pyrolysis reaction during processing, and the contamination of oil, food packaging materials and solvents during processing. Control methods include refining, activated carbon treatment, extraction, oxidation, etc., and put forward the prospects for the control of PAHs production in edible vegetable oils.
